This is a sit-down conversation, not a form to fill out. We ask about the cities you grew up in, the dish your family makes that nobody else gets right, and the two or three dishes you already know have to be on the table. The goal by the end of this conversation is a flavor brief, not a guest count.

Step 2: The Tasting Session

Nothing served at the tasting is a mockup. If a dish is on the table during your tasting, it is cooked by the same kitchen team, using the same process, that will serve your wedding. This is deliberate. It is the stage where a dish that sounds good on paper either holds up or does not.

Tastings happen at Virtuoso’s experience centre in Noida, Sector 61, not at a live event. "Tasting is the most important component of our discovery process. Unlike other caterers, we do not invite couples for tasting at our events. Instead, we host couples with family for an intimate tasting session at our experience centre. It leaves more space for conversation and honesty," said Aarti Sharma, co-founder of Virtuoso Catering House.

Step 3: Menu Customization

After the tasting, the menu is adjusted for dietary needs, family traditions, and any dish the couple wants reworked. This is also where regional or cultural elements get folded in, so the final menu reads as personal rather than borrowed from a template.

Step 4: Sourcing the Ingredients

Once the menu is locked, sourcing begins for seasonal and premium ingredients. A dish that tasted right in the tasting session can fall flat on the wedding day if the ingredients behind it are not sourced with the same care, so this step happens well before the final week of planning.

Step 5: The Chef’s Trial Run and Final Sign-Off

Every dish is tested again in the kitchen before it is formally approved, checking plating, portioning, and consistency at the volume the wedding actually needs. Couples receive the final tasting notes and sign off here, which is what keeps the wedding day itself close to surprise-free.
