Why We Don't Give You a Flat Number Upfront

So instead of a price list, we start with a conversation. What's the occasion. Who's in the room. What you want people to remember walking out. The number comes after that, not before. Because the number should reflect the event, not the other way around.
This is also why "cheaper" caterers can quote faster. They're selling you a template with your logo on it. We're not.
What Actually Moves Your Number
If you want to estimate your own budget honestly, these are the real levers, not the marketing ones.
Menu complexity, not menu size. A more considered menu doesn't automatically cost less than a larger one, since every course is custom-built rather than mass-prepped.
Staffing ratio. The team that "disappears into the background exactly when it should" isn't cheap to keep on payroll. More staff per guest means faster service, cleaner tables, and nobody waiting for their course. That ratio is invisible until it's missing.
Sourcing and provenance. A dish built around a specific ingredient's story, where it came from, why this season, costs more than the same dish built to hit a food cost percentage.
Service style. Plated service costs more than a buffet, per guest, every time. It also changes the entire feel of the room: plated says "we made this for you," a buffet line says "help yourself." Both have their place. They are not the same event.
Season and venue logistics. An outdoor Delhi wedding in October behaves very differently from one in June. Kitchens get built on-site, timelines get compressed. None of that shows up on a menu, and all of it shows up on an invoice.
Curation costs more than collection. It also gets remembered more.
